I detest waste especially food waste which when you take into account all the costs that also go into producing and distributing food it are massively more than the cost to your pocket.  I still have a wormery ticking over in the garden which I used long before there was a food waste collection. Worms don't like all food, so I never put absolutely everything in anyway eg citrus peel and onion and cooked food.  This also led me to search out what we as a rich nation don't eat /once ate or now discard that other countries do eat as well as trying different recipes for locally grown vegetables that I wasn't used to eating/thought I didn't like in an effort to reduce waste and travel a bit more.So I've made  my own candied peel - once - very nice - but since most citrus fruit peel has been waxed and heavily treated it's probably not something I'd bother with again.  I now eat broccoli and cauliflower and cabbage stalks - just peeling the toughest bits a little.  Those often don't even reach the pan as they are treated as the cook's treat. The grandchildren have been a little curious of the green carrots that taste like broccoli.  It's all the same anyway in a cheese sauce or stir-fry.So much that we ate as children when food came from the garden has already been chopped off before it reaches the shops.  Leeks sre only half or less there and toughest leaves cut finely and washed well disappear into soup.  We eat a lot of those instead of onions in stir-fry.  Banana skins can be eaten but I wiuldn't unless they were organic.  Nigella has a recipe which includes you cooking banana skins - it's on my long to do list as I've yet to try that!
