I have no doubt that you are correct.
I followed some courses on vegan cheeses and gluten free breads because a relative of ours decided to follow a vegan diet but was later diagnosed as gluten intolerant.
The cheeses were absolutely amazing! I did not perfect them as such (meaning maturing them into cheddar cheese and others) but the basic cheese made from cashew nuts is unbelievably delicious! The breads are quite a bit more challenging.... I am following her "Healthy Menu" which is brilliant and also her deserts are fantastic.
She is based in Spain, is an extremely respected and experienced chef and, after watching her programmes, can say she has an amazing amount of energy and looks extremely healthy.
She was diagnosed as having thyroid problems and something else and her doctor, as well as her nutritionist, recommended she ate fish and added eggs to her diet. She apologized profusely to everybody about her change of diet and invited all of her followers to leave her courses/programmes as she was no longer classed as a vegan. Nobody stopped as far as I am aware.
My relative is a nurse in the West Country. She had been working very long hours for weeks on end, was beyond exhausted and her boyfried said enough is enough — you need strong sustenance. So he bought her fish and chips. She loved them and felt enormously better after eating them. I am not too sure she is eating eggs but would not categorically say she has stopped eating fish.
As a meat eater, I am very aware that a vegan diet can be incredibly healthy. However, if somebody has physical problems diagnosed, I would never say they cannot include items such as eggs or fish in their diet.
